Glucose and Fructose

Chemistry Grade 10 Difficulty 2/5

Beginning of the lesson

Open-chain glucose with a terminal aldehyde and fructose with an internal ketone, both C6H12O6
Glucose and fructose: same formula, different carbonyl position

Glucose and fructose: the big idea

Glucose and fructose are monosaccharides with the same molecular formula, C6H12O6, but different structures. Open-chain glucose is an aldohexose; open-chain fructose is a ketohexose. This structural isomerism changes carbonyl position and reaction pathways.

Learning goals

  • compare glucose and fructose as structural isomers;
  • identify aldehyde, ketone, and hydroxyl groups;
  • explain open-chain and cyclic forms;
  • interpret oxidation, fermentation, and reducing-sugar tests.
