Starch and Cellulose

Chemistry Grade 10 Difficulty 2/5

Beginning of the lesson

Alpha-linked branched starch chains compared with straight beta-linked cellulose chains and hydrogen bonding
How glycosidic bonds shape starch and cellulose

Starch and cellulose: the big idea

Starch and cellulose are polysaccharides built from glucose and commonly represented by (C6H10O5)n. Their different glycosidic bonds produce very different shapes, properties, and biological roles.

Learning goals

  • distinguish starch components from cellulose;
  • compare α- and β-glycosidic linkages;
  • explain branching, helices, and fibers;
  • write a simplified hydrolysis equation;
  • interpret the iodine test for starch.
